Mexico City–born chef Allan Yañez has 17 years of experience in top kitchens, from Martín Berasategui and Azurmendi in Spain to Máximo Bistrot and Edo Kobayashi in Mexico. Drawing on pre-Hispanic flavors and refined techniques, he is now preparing to open his own restaurant in Mexico City while showcasing his cuisine through pop-ups and international tours.
